Avocado Feta Salsa |
Tonight I am going to an outdoor concert. We are seeing Darius Rucker at Ravinia. It's a beautiful outdoor venue, and the best part is that you can bring in your own food and beverages. There are four couples going and we are all bringing a few things to share. One of my easy favorites to make for an outing like this is Avocado Feta Salsa. I stumbled across the original recipe a few years ago, but have tweaked it a little taking some shortcuts (seasoned feta cheese) and adding cucumber. Now to come up with an outfit........
The recipe:
Chopped Plum or Grape Tomato
One avocado seeded and chopped
1/4 cup finely chopped red onion
Chopped cucumber
4 ounces of Mediterranean Herb Feta Cheese (shortcut)
1 TBSP Red Vinegar
1 TBSP Olive Oil
Salt and Pepper to taste
Lightly mix all ingredients together and chill for 2 hours. Serve with Pita Chips.
