Most households have a favorite chili recipe, in my home there are two. My husband makes the beef chili and I make the chicken chili. Even my very picky son loves it. You can make this in a crock pot or stove top. I made this version in the crock pot.
2 cans of Great Northern White Beans
1 medium onion chopped
3 cloves of garlic minced
2 cans (4 oz each) of diced green chilies (I use hot)
2 teaspoons ground cumin
1 teaspoon dried oregano
1 1/2 teaspoons cayenne pepper
1/2 teaspoon salt
2 lbs skinless, boneless chicken breast (*shortcut: use grocery store rotisserie chicken breast)
2 14 1/2 oz. cans chicken broth
Garnish: sliced avocado, shredded jack cheese, sour cream, tortilla chips.
Chop chicken into bite sized pieces.
Chop onion into small pieces.
Add canned ingredients to pot.
Add remaining ingredients.
Cook on low for 10-12 hours, or on high for 5-6 hours. If stovetop method is used, 20 - 30 minutes.
Prepare garnish items.
Serve and enjoy.
